This one-for-all indoor grill recipe teaches you how to make the most classic Chinese BBQ sauce. With this sauce, you can enjoy authentic Chinese BBQ anytime at home.

When I was a college student in China, one of my happiest moments was enjoying midnight street foods with my best friends.

Lamb, beef, pork belly, tofu, mushrooms, and vegetables are coated with cumin, white pepper, chili powder, and Sichuan peppercorns.

Right after the caramelized crispy sauce surprises your teeth, the fat will melt on your tongue within seconds.

How to Pick an Indoor Grill 

Indoor grills allow you to grill all year long at home in all weathers from dusk to dawn, if you are willing to hhaahahah. 

There are so many different grill types, do you know which one fits you best?

– Range top grill: 

Some people (including me) believe that meat tastes better cooked over an open fire. Range top grills usually sit above burners, which could bring out great BBQ flavors that’s similar to outside grilling. 

A disadvantage of range top grills is that, instead of sitting around a table, your friends and you might have to stand by the stove throughout the meal. And range top grills usually do not come with lids, which means that there could be quite some smoke and oil splashing in your house when you do indoor grills with them. 

– Panini Press Grill 

Panini press grills are good for cooking sandwiches, burgers, seafood, steak, and vegetables. They can cook both sides of your food at the same time, which saves you much cooking time. 

However, a panini press grill might not be the best choice for a BBQ party. It’s usually not large enough to grill large pieces of meat, such as ribs or whole chicken. 

– Smokeless Electric Grill 

Smokeless electric grills are popular nowadays. Their built-in smoke extractor could quickly suck any smoke released from the food to a water tray, which makes your apartment less smoky after a BBQ party. And they make grilling easier with their adjustable temperature control panels.

Although electric grills are fun to use and easy to clean, it’s still hard for them to bring out the flavor that you would get with a open fire barbecue.

Before it’s getting warm and sunny enough outside, I think I will stick to a smokeless electric grill to treat my friends, to have fun with Mr He, and to please my own taste buds~

ONE-FOR-ALL Indoor Grill Recipe

Equipment

  • Smokeless Indoor Electric Grill

Ingredients

– To Make Classic Chinese BBQ Sauce

  • 2 tbsp light soy sauce
  • 1 tbsp red pepper chili flakes
  • 2 tbsp sesame seeds
  • 1 tbsp cumin powder
  • ½ tbsp sugar
  • ½ tsp salt
  • 1 tsp Sichuan peppercorn powder 
  • ½ tsp white pepper powder
  • ½ tsp chicken powder or MSG (It’s my very first time including MSG in my recipe. It’s a must-have for Chinese BBQ sauce. It’s not that harmful to your body. But still I wish I don’t have to add it. )
  • ¼ cup smoking hot cooking oil (vegetable oil, corn oil, peanut oil, sunflower oil)

– Meat and Vegetables of Your Choice (below is what I used in this video)

  • 100 g seafood mushroom (or enoki mushroom)
  • 4 pieces firm tofu
  • 4 chicken wings (the middle part, it’s called wingette?)
  • 5 slices pork belly
  • 4 wedges cabbage (or any vegetables you like, such as eggplants, zucchini, asparagus, potatoes…)

Instructions

1. Brush or spray cooking oil over the grill pan, put meat and vegetables on the grill. Turn on the heat, grill on 400˚F for 10 minutes. 10 minutes later, flip every ingredients to cook the other side for 10 more minutes.

2. Meanwhile, put every ingredient under “Chinese BBQ Sauce” (see ingredient section above) except cooking oil to a bowl. Heat up ¼ cup of cooking oil over high heat until smoking hot (about 450°F for vegetable oil, when you start to observe some smoke). Carefully pour the hot oil over the sauce. Mix well.

3. Brush BBQ sauce on both sides of all ingredients. Sear each side for 1 more minutes until the sauce on the surface turns dry.

4. You can also put shrimp and beef on a skewer to make Chinese kebab. Have fun and enjoy!
