Japanese Butter Rice

This was my very first Tiktok video that went viral!

I think it’s because this Japanese butter rice is incredibly delicious and unbelievably easy to make.

It has been more than 1 year since I posted this video, and people are still leaving comments telling me that they have been eating Japanese butter rice EVERY SINGLE DAY since then!

Butter Rice from Midnight Diner

I learned about this dish from a Japanese anthology TV series called Midnight Diner (深夜食堂, Shinya shokudō).

Butter Rice was introduces in Season 1 Episode 5. The original recipe only has 3 ingredients: rice, butter, and soy sauce.

I added sushi nori, pork floss, and potato chips to make my butter rice more flavorful. Feel free to substitute the toppings with any other ingredients you like!midnight diner2 Japanese Butter Rice

Japanese Butter Rice vs. Chinese Lard Rice

More than 10 people have left comments under my Japanese Butter Rice Tiktok video telling me that, they’re Japanese and they’ve never heard about this dish before. Some even blamed me for posting a “fake” Japanese recipe.

I was so confused, because I did learn that recipe from a Japanese TV series, which was famous for its authentic Japanese foods. 

Anyway, I also added some pork floss, which was a traditional Chinese food, as one of the toppings. So I don’t mind call this dish Chinese Butter Rice~

Just kidding! Chinese people have our own version of this dish – Lard Soy Sauce Rice 猪油拌饭.lard rice

To make Lard Soy Sauce Rice, you basically substitute the butter in the recipe below with 1 tbsp of lard.

This was one of my childhood favorite foods! When I was a kid, I used to hate eating rice.

However, as long as my grandpa blend the rice with some lard and soy sauce, I could eat two bowls of rice and ask for a third bowl.

Light Soy Sauce vs. Dark Soy Sauce

Both Chinese dishes and Japanese dishes use soy sauce very often. If an Asian recipe tells you to add soy sauce without pointing out whether it’s light soy sauce or dark soy sauce, it’s 99% light soy sauce.

According to Lee Kum Kee, an Chinese sauce brand, “light soy sauce is used for seasoning and dark soy sauce is used for adding colour to dishes. Light soy sauce is golden brown in colo[u]r and rich in taste to add flavo[u]r during marinating and seasoning stage. It uplifts the flavo[u]r of any meat, noodles or rice dishes. On the other hand, dark soy sauce is used to add deep colo[u]rs to meat stews and casseroles and often paired with light soy sauce to achieve the perfect taste and colo[u]r.” light vs dark soy sauce

Japanese Butter Rice Recipe:

INGREDIENTS for 2 servings

  • 1 cup of  steamed rice (ideally sushi rice)
  • 2 tbsp Unsalted butter
  • 2 tbsp Light soy sauce
  • 1/4 sheet Sushi nori
  • 1/4 cup Pork floss 
  • 1/3 cup Potato chips 

INSTRUCTIONS

1. Prepare 2 small bowls. Place 1/2 cup of hot steamed rice in each small bowl. Dig a hole in the middle.

2. Put 1 tbsp of butter in the hole, bury it up with rice.

3. Drizzle 1 to 2 tbsp of light soy sauce over the top of rice.

4. Use a pair of clean scissors to shred 1/4 sheet of sushi nori. Sprinkle the shredded nori over the rice.

5. Top with pork floss or crushed potato chips.

Ingredients
  

  • 1 cup Steamed rice

  • 1/3 cup Potato chips Optional
