What’s Steamed Potato Balls?

Steamed Potato Balls (东北蒸土豆丸子) are a beloved traditional dish from Northeast China, particularly cherished by the locals for their comforting and simple preparation.

The texture of Steamed Potato Balls is tender, smooth, elastic, and bouncy.

The flavor of Steamed Potato Balls themselves are mild with a subtle earthiness of the potatoes. A pinch of salt in the dough giving them a gentle savory profile.

The dough itself doesn’t overpower the dish, allowing the dipping sauce (usually made with soy sauce, vinegar, or chili oil) to add extra depth, making each bite more flavorful. Overall, the flavor is simple yet satisfying, perfect for pairing with bold or tangy sauces.

With minimal ingredients, this dish is quick and easy to prepare, making it ideal for everyday family meals.

Similar Dishes from Other Countries

While Steamed Potato Balls are a staple in Eastern Chinese cuisine, many other countries have their own versions of potato-based dumplings or balls that are equally popular. For example:

Kluski Śląskie (Poland): These Silesian potato dumplings are a traditional Polish dish, made from boiled potatoes, flour, and egg. They are soft and round, often served as a side dish with meats and gravies. The dough is slightly firmer than the one used for Steamed Potato Balls, but the texture remains tender and smooth.

Potato Gnocchi (Italy): Gnocchi, particularly the potato variety, is a famous Italian dumpling made from mashed potatoes, flour, and sometimes egg. The dough is rolled into small pieces and pressed with a fork to create ridges. Gnocchi are often served with a variety of sauces, such as tomato sauce, pesto, or butter and sage, and are a beloved comfort food in Italy.

Kartoffelklöße (Germany): In Germany, Klobenknödel are potato-based dumplings made from mashed potatoes mixed with flour, egg, and sometimes seasoning. These dumplings are boiled and served with hearty meats like roast pork, often accompanied by rich gravies and sauerkraut.

Each of these potato-based dishes, though from different parts of the world, shares a common bond in the way they showcase the versatility and comfort of potatoes in a dough or dumpling form.

Tips for Perfect Steamed Potato Balls

Choose the Right Potatoes

Use starchy potatoes like Russet or Yukon Gold for a smooth, chewy texture. Waxy potatoes may result in a denser dough.

For more consistent results, weigh the potatoes after peeling.

Steam Until Soft

Make sure the potatoes are fully tender before mashing. Undercooked potatoes will make the dough lumpy and difficult to mix. Cooking times may vary depending on your steamer or stovetop.

If you prefer, you can boil the potato chunks instead of steaming them. However, boiled potatoes retain more moisture, so you’ll need to use less water when kneading the dough.

Mash Until Smooth

A fine, lump-free mash ensures an even dough consistency. A potato ricer works best for achieving a fine texture. If using a fork to mash, press the potatoes through a fine mesh strainer to remove any lumps.

Adjust Water Gradually

Start with less water and add more as needed. The dough should be smooth and pliable, not sticky or too dry.

Test the Dough

Roll a small piece into a ball. If it cracks, add a little more water. If it’s too sticky, sprinkle in a bit more potato starch.

Taste a small amount of the finished dough to check if it needs more salt or a bit of pepper. Remember, the potato balls are meant to have a mild, basic flavor since they will be served with a flavorful dipping sauce.

Leave Space When Steaming

The potato balls will expand during steaming, so be sure to leave enough space between them to prevent sticking. Additionally, brush the steamer with a thin layer of oil to keep them from sticking to the surface.

Serve Warm

These potato balls are best enjoyed warm and fresh. As they cool slightly, they develop a glossy appearance with a subtle yellow hue—this is the perfect time to eat them. If they become firm after fully cooling, simply reheat them by steaming for a few minutes.

Dipping sauce

For the best spicy dipping sauce, pour hot oil over the chili powder and sesame seeds to release their aroma, and mix well to ensure balanced flavors. Adjust the spice level by reducing chili powder or adding a touch of sugar or honey. Choose black vinegar for a richer tang or rice vinegar for a lighter acidity. The combination of soy sauce and oyster sauce enhances umami, and letting the sauce sit for a few minutes allows the flavors to meld.

For extra depth, consider adding minced garlic, green onions, or a drizzle of sesame oil. Or you can add some peanut butter or sesame paste for a creamier texture. Feel free to adjust it to your own taste.

Super good,I really loved them! I would say to leave them in the steamer after they are done so they are still warm and chewy!

I thought the starch would affect the taste too much but it actually didnt! I really loved it!
Just know that starch can be a pain to clean off of anything including your hands (I used cornstarch), so you might want to wear gloves and cover your mixing bowl with clingfilm. Also, if you don’t have a steamer, you can actually just boil them!

    1. that’s nice. 🙂 i have to use cornstarch as I don’t have potato starch and i’m happy knowing that can be a good substitute.

They are so delicious and soft! It was very fun to make them. It is a tasty, easy, and experimental recipe that I will definitely use again!
Just as a note, Sriracha hot sauce also tastes amazing on them and I would 100% recommend (especially if you don’t have ingredients for the other sauce or just want to try something else)
    Super fun and yummy ☺️
