I got this motivational fortune cookie message around this time last year, when have fewer than 10k followers on Tiktok. 

I totally understood that fortune cookies were just for fun – they could never predict anyone’s future. But I was so encouraged by this message and chose to deeply believe in it!

I pinned this fortune message on my refrigerator, read it whenever I felt tired, upset or discouraged. It cheers me up all the time!

Now, 1 year later, I have 2.3 million followers! Woohoo🙌~

So I guess it doesn’t really matter whether fortune cookies can bring us good lucks. As long as we believe in ourselves and never give up, good things will eventually happen to us!

Why are we making fortune cookies?

It’s going to be our American grandpa’s 95th birthday ~🎉 Mr He and I decided to send him some homemade fortune cookies to bring him lots of blessings and loves! 💖

This super easy fortune cookie recipe allows you to make authentic Chinese restaurant style fortune cookies at home with simple ingredients like all propose flour, egg whites, milk (or just water), butter, sugar, and cornstarch.

You can even make a super delicious marshmallow filling to make your fortune cookies so creative special, and fun to eat.

Some useful tips for homemade fortune cookies:

  1. Add cornstarch! 

This picture below shows what I got when I skipped the cornstarch and only added flour in the batter:

    If we only add flour and skip the cornstarch, the fortune cookies will be too fluffy and soft to be shaped. They will still taste good, but they will look wrinkled, and they won’t turn crispy after cool down. 

    I’m not 100% sure about the scientific reason behind adding cornstarch in fortune cookies, but according to an article from Baking Kneads, cornstarch in a cookie recipe is basically “there to help provide structure” since it “helps to hold the cookies together”, and make them both “light and chewy“. 

   Once I forgot to add any butter, believe it or not, it still worked without any oil in the batter! But whenever I tried to skip the cornstarch, these fortune cookies would either break or wrinkle. 

    2.  Bake until slightly brown~

This was what happened when I only baked my fortune cookies for 7 minutesbroken fortune cookie

    Experience proves that we have to bake a fortune cookie until 10% to 20% of its surface turns brown, so that it’s strong enough to hold the shape. 

    I put my baking pan on the top rack of the oven, and it took my fortune cookies about 8 minutes 30 seconds to get the ideal color when baked at 350 ◦F. Each oven might work slightly differently.

    Set a timer and observe carefully, it might take a couple of tries.😉

3. It’s going to be hot 💋

    The fortune cookies will turn hard and crispy quickly once they are cooled down. You will only be able to shape them within about 1 minute after removing them from the oven, when they are still hot.

    Will they burn your fingers? Kinda!

    Your fingers won’t be injured, but they will feel burnt. Wearing a pair of gloves could help. 

    Mr He has a very low heat tolerance. I was very surprised to see him folding these hot fortune cookies with me all the time. Maybe it’s because that he really wanted to contribute to our grandpa’s birthday gift. He did scream a bit tho. 😂

    Since they need to be really hot to be shaped, do not bake a batch of fortune cookies that’s more than the number of people you have! 

    – I had 2 people here, so I baked 2 fortune cookies at a time.

4. Marshmallow filling fortune cookie recipe

Fortune cookies are fun to play with – since they have those fun fortune messages inside; But they could be boring to eat – they are basically just sugar cookies.

Can we make fortune cookies more delicious?  

Yes, no one has made it before! But I did it 😎 They tasted amazing with my homemade marshmallow filling!

To make marshmallow filling for about 12 fortune cookies:

1. Use medium heat to melt 30g unsalted butter in a large non-stick pan.

2. Add 100g marshmallows (any shape, size, flavor or brand) to the pan. Fry over medium heat until all the marshmallows are melted and well-blended.

3. Turn off the heat. Add 35g milk powder to the pan. Stir until well combined.

4. Transfer to a silicon mat or waxed paper to cool down.

5. Once it’s not too hot to be handled (but still warm), pinch off a grape size of the marshmallow and roll it into a ball. Use them as the fortune cookie filling.

Easy Homemade Fortune Cookie Recipe

EQUIPMENT

  • oven

  • Parchment paper or silicone mat

INGREDIENTS

Fortune cookie batter

  • 2 egg whites
  • ½ tsp vanilla extract
  • 2 tbsp melted butter (can be substituted with vegetable oil, corn oil, or peanut oil)
  • 2 tbsp milk (can be substituted with oat milk, soymilk, coconut milk, or water)
  • ½ cup sugar
  • ⅔ cup all purpose flour
  • 1 tbsp cornstarch

Marshmallow Filling (optional)

– the given amount below is for 12 fortune cookies

  • 100 g marshmallow (any size, flavor, or color)
  • 30 g butter
  • 35 g milk powder

INSTRUCTIONS

1. Cut a paper into 12 rectangle 3″ x ½” strips, write messages on them to make fortunes. Preheat oven to 350 °F.

2. Place 2 tbsps of butter in a small bowl, microwave for 20 seconds until melted. Add all the batter ingredients (egg whites, vanilla extract, melted butter, milk, sugar, all purpose flour, and cornstarch) to a large bowl. Mix with a whisk until completely combined. The batter should look like condensed milk.

3. Line a baking pan with a silicone mat or parchment paper. Spoon about 1 tbsp of the batter onto the parchment paper, and spread the batter with the back of the spoon into a 4″ circle(Bake 1 or 2 at a time. The fortune cookies turns hard quickly after they cool down. You won’t be able to shape them once they turn hard.)

4. Bake on at 350 °F for 8-9 minutes, until the edge turn slightly brown. (If the edge is not brown yet, bake them for 1 or 2 more minutes, otherwise the cookies might be undercooked and they could break easily when you shape them.)

5. Remove baked fortune cookies from the oven. Quickly place a fortune strip (or marshmallow filling, see instructions in the article above) in the center of the cookie, fold the cookie in half, place the fortune cookie on the rim of a bowl or mug, fold the two corners down to get the fortune cookie shape. 

(You will have to finish these steps quickly when the fortune cookies are still hot, otherwise they will crack. If you feel they are too hot to be handled, gloves can help a bit.)

6. Place the shaped cookies in a muffin tin, allow them to cool down and hold the shape. Repeat with the remaining batter.
