  • 1 tbsp chili oil (or regular cooking oil for non-spicy version)
  • 1 block tofu (silken or soft tofu)
  • 4 eggs
  • ½ red bell pepper (diced)
  • 1 green onion (chopped)

Sauce

Instructions 

1. In a nonstick pan over medium heat, add 1 tablespoon of chili oil (or regular oil).

2. Gently place a block of silken/soft tofu into the pan. Optional: Use a straw to poke about 40 holes into the tofu to help it absorb flavor. (Tip: Block the top of the straw with your thumb before poking.)

3. Beat 4 eggs in a bowl, then pour them evenly over the tofu. Cook for 1–2 minutes until the eggs begin to set at the bottom.

4. In a small bowl, combine oyster sauce, soy sauce, sesame oil, water, salt, sugar, and cornstarch. Mix well until smooth.

5. Pour the sauce over the tofu and eggs. Use a spatula to gently cut the tofu into ½-inch square pieces. Shake the pan lightly to spread the tofu and eggs evenly.

6. Sprinkle diced red bell pepper and chopped green onion over the top.

7. Cover the pan with a lid and simmer on medium heat for about 5 minutes until everything is cooked through.

8. Serve hot with steamed rice and enjoy!

2. Prep everything before you start cooking

This dish comes together fast—so have your diced bell pepper, chopped green onion, beaten eggs, and sauce mixed and ready by your side. Since the tofu and eggs cook quickly, you don’t want to risk overcooking them while scrambling to chop ingredients mid-recipe.

3. How to remove the silken tofu from the box without breaking it

When you try to remove a delicate silken tofu from its box, how often does it break apart like this?

In order to release the tofu from the box without damaging its delicate texture, you can typically use a knife or scissors to carefully trim off the bottom corners of the tofu box.

The tofu box is a closed container with the tofu inside. The tofu is tightly held within the box due to the pressure exerted by the packaging material, creating a seal around the edges. This pressure prevents the tofu from freely moving within the box and makes it challenging to slide it out smoothly.

When you trim off the bottom corners of the tofu box, it creates small openings or gaps in the seal, allowing air to enter the box.

Now, when you gently press the tofu from the top, the air pressure inside the box exerts a force on the tofu, helping to loosen it from the sides of the packaging.

If the tofu is exceptionally soft or firmly stuck to the box, even after trimming the corners, it may still be challenging to slide it out. In such cases, there’s an alternative method to assist with its removal. Carefully flip the tofu box over a plate and gently blow some air into each corner of the box. 

This will create a small gap between the tofu block and the box. With the gap established, gently lift up the box, allowing the tofu to come out and land smoothly on the plate.

4. Poke holes in the tofu (optional)

Use a straw to poke holes in the tofu so the sauce and eggs seep in—just block the top of the straw with your thumb for easy poking!

  • When you poke the tofu while sealing the top of the straw with your thumb, it works like a mini vacuum and helps you make clean holes without pulling chunks of tofu out. It’s a simple trick that makes the process neater and smoother!

5. Don’t stir the eggs too much

Pour the beaten eggs over the tofu, and they’ll naturally flow around it, spreading evenly in the pan to create a soft, custardy base as they cook.

Let the eggs cook undisturbed until the bottom is set—don’t stir just yet. Stirring too soon can break up the tofu and disrupt the eggs from forming a smooth, cohesive base.

6. Adjust the spice level

Use chili oil for a spicy kick or regular cooking oil for a milder version. You can also add chili flakes on top if you want extra heat.

7. Customize the veggies & meats

For personalized texture and nutrients, try incorporating mushrooms, peas, or corn along with the bell pepper.

If you’re a meat lover, you can top it with diced spam or sausages. Since this dish cooks quickly, be sure to use precooked meat or ingredients that are safe to eat raw to prevent any food safety concerns.

    Made this and it was really good and very filling I don’t have chilly oil so I just add regular oil and hot sauce but it was very good would definitely make this again!!!
